Grandma's Thanksgiving Day Meal
Grandma would begin to pass the bowls around and we would all join in. Grandma Lillian was a wonderful cook. She would have that perfect roasted turkey with stuffing, gravy, and cranberry sauce. I can't forget the creamy mashed potatoes, green beans, sweet potato casserole, apple and raisin salad, homemade yeast rolls, iced tea, and pumpkin pie with whipped cream. It would be the same menu every year, but it was always delicious. I would eat until my stomach hurt. When I became an adult, my Grandmother shared her pumpkin pie recipe with me. She always said it had a special ingredient. I was made with LOVE.
Grandma Lillian's "Pumpkin Pie Recipe Recipe for Today's Woman."
Use the prepared pie crust frozen department of your local grocery store. To make filling use fresh pumpkin from the produce section, it tastes much better than canned pumpkin.
First, cut the pumpkin in half. Remove seeds. Place aluminum on a cookie sheet. Second, lightly grease the foil. Third, place the pumpkin cut side down on foil. Finally, bake for 30 to 40 minutes at 325 degrees or until done. Cool. Remove pumpkin meat from the peel. Mash or blend until smooth in a large mixing bowl. Now add milk, beaten eggs, brown sugar, pumpkin spice, and vanilla flavor, and salt blend well. Blend well by hand or electric blender. Pour mixture into unbaked pie shell. Bake for 10 minutes at 450 degrees. Reduce temperature to 350 degrees. Bake for another 40 minutes or until a toothpick inserted in the center of the pie comes out clean. Remove and cool. Place in refrigerator until cold. Top with whipped cream if desired.
Filling:
2 cups cooked masked pumpkin
1 (12 fluid ounce) can
2 beaten eggs
1 3/4 cup packed brown sugar
1 1/2 teaspoons pumpkin spice
1 teaspoon vanilla flavor
1/2 teaspoon salt
